Because they view themselves as different...
One of the most frustrating paradoxes for people who want to lose weight is when they see themselves as 'different' than the rest of the population.
The science of fat loss has already been determined...there is no miracle pill or surgery that makes up for lack of a fitness-based lifestyle. With the prevalence of articles about leptin, hormonal imbalances and supposed discoveries which explain why people get fat (other than poor nutrition and adequate exercise) misleads and take advantage of false hope in people who have yet to come to terms with the fact that they have to change their lifestyle in order to get healthy and stay healthy.
There will always be scammers, marketers, 'researchers' and even doctors that take advantage of people who will spend four times the energy looking for how they can keep living an unhealthy lifestyle but get the fat loss results a fit person would get than simply doing the exercise and nutrition habits that are time-tested and proven to produce amazing results. That's what it comes down to!...people who specialize in catering to people who refuse to exercise and get their nutrition dialed-in.
One of the perks of having been doing this work for decades is that I have seen the science evolve, as well as marketing being directed to people who are in such denial about their situation that they begin convincing themselves that their situation is so different that none of the science applies to them...they are different.
How this shows up is that they seek out the experts in the field of fat loss, but instead of simply listening, taking in, applying and refining the process of fitness and health they screen the information for what matches their idea that their situation is so different that the science doesn't apply to them. In the decades of doing this, the phenomena has become more common as the average of subpar nutrition across society has increased...as people progress through the levels/phases of subpar nutrition, their ability to cognitively process the information that would help them the most doesn't register in the part of the brain that it would had they been properly/optimally nourished. This phenomena presents like any other addiction but there isn't as much agreement among addiction experts that junk food dependence is as addictive as other substances.
After decades of this work, I can tell within a few minutes of talking with a person how well-nourished they are based on what they talk about, how they talk about their situation and their attitudes toward exercise and nutrition.
The idea of "Too close to the forest to see the trees" is a match for this kind of situation because a person who has convinced themselves that they are so different that exercise and nutrition don't apply to them can have the information they need presented right to them, yet they dismiss it continuing to look for the 'cure' but purposefully skipping exercise and nutrition.
Until a person comes to terms with the fact that exercise and nutrition applies to everyone, they'll continue to gain fat, get more unhealthy, feel worse and waste time when they could have been reclaiming their life.
I really, truly feel sorry for the people who think their situation is different. This phenomena speaks to the fact that you can't save everyone. People have to be in a state of readiness to benefit from the science. Until a person surrenders to the process and has faith they can achieve success once and for all they'll likely talk themselves out of simply following through on the basics. I've seen both sides of the spectrum: people who won't adopt any nutrition structure and have consequences to their health as well as people who think they are taking healthier steps, adopting what I call pet-nutrition theories. In the later, people will pick a nutrition program they think puts them above others, from a ideology standpoint (say veganism) and even though their health is suffering and they are becoming anemic (malnourished) they continue to keep eating this way and even promote it to others.
When people insist that they are so different or their situation is so different, it really points to emotional stumbling blocks.
